Recipe: Like Pizza, Only Healthy

Here’s another easy recipe that tastes just like pizza.

You will need 3 whole grain English muffins cut in half, six slices of tomato, and some shredded cheese.

You lay the English muffin halves in a baking pan open side up.  Place a slice of tomato on each one of them.  Then, spinkle cheese on each one.  Put it in the oven at 350 degrees farenheit until the cheese melts and browns a little.

I would warn you to let it cool some before biting into it.  The tomato will be hot.  Honestly though, it tastes just like pizza.

Recipe: Catfish Steak

Catfish Steak is something that we normally make on the grill to save on the electric bill.  Our grill is an aluminium tri-pod holding a round grill over a fire pit.

My favorite kind of fish is catfish.  I don’t like buying it in the store.  It’s much cheaper to fish it out of the river.  So, here’s a recipe that tastes like fine cooking.

You’ll need catfish, fresh cilantro, and lemon.  Cilantro can be found in the produce section at Wal-mart for about 99 cents a bunch.

First you’ll need to catch about a 20 lb catfish and take the skin off of it.  On most fish the fillet goes from just behind the head to the tip of their tail.  It’s the same on a catfish.  The thicker part is toward the head.  If you get a big enough fish, it’ll be two or three inches thick or more.  Once you get the fillet off the first about 5 inches will be your steak.  You’ll have one on each side, and sometimes you can cut each side in two.  You can save the rest of the meat for frying.

Once you have your steaks cut, lay out some aluminium foil.  Then, place one steak per piece of aluminium foil.  Take a quarter of a lemon and squeeze all the juice you can out of it onto one steak.  So, that 1/4 of a lemon per steak.  Chop up some cilantro and sprinkle some on your steak to taste.  Now, cilantro has a pretty strong flavor so you won’t want to put too much on there. 

So now you have your catfish steak seasoned.  You’ll need to wrap the aluminium foil around the fish, but don’t let it touch the top of the catfish or it’ll stick.  Fold the edges of the foil tight so the juices don’t escape.  Then slow cook it on your grill or in your oven until it’s done.

We usually leave it in the aluminium foil to serve it.  If you cooked it long enough, the meat will flake away with a fork.  You can serve baked potatoes with this if you’d like.
